An estimated 50 million pumpkin pies are consumed every Thanksgiving, making it the biggest day of the year for this classic holiday dessert. While it may be tempting to stop at your local grocery store to pick up a pie, learning how to master baking the coveted pastry is far more rewarding (and delicious). That’s why the Gourmandise School is offering a virtual Thanksgiving pie baking experience led by critically acclaimed pastry chef Robyn Collins on November 24 from 10 a.m. to 1 p.m.
Chef Collins has been a culinary artist for nearly 15 years. She currently serves as the Executive Pastry Chef for The Pie Room in Beverly Hills and as an instructor at the Gourmandise School. Her expertise in artisanal baking and ornate pastry techniques allows her to provide comprehensive classes on crafting delicious and beautiful confections.

The Pie Class: Thanksgiving Pies is an immersive online experience where Chef Collins guides home bakers of all skill levels through creating two of the most popular Thanksgiving desserts: pumpkin and apple pie. Prior to the three-hour course, participants will receive an ingredient list, a detailed equipment checklist and instructions for setting up the virtual class. Once it begins, students will learn to perfect every step of the pie-making process, from crafting a flaky, buttery crust to preparing a seasonally rich filling.
Designed to be both interactive and informative, this class allows students to ask questions in real time and receive feedback from Chef Collins. By the end, bakers will have two handcrafted and delicious pies that they can freeze and bake for Thanksgiving dinner, and more importantly, the skills to recreate these desserts for years to come.
