Inside Andaz Scottsdale’s Land of Milk and Honey

For National Honey Month, the Scottsdale resort is carrying its on-site honey from the spa to the table.

At Andaz Scottsdale, even the Wagyu gets a seven-day honey treatment before reaching the table at a five-course dinner this September. Harvested from hives elsewhere on the resort grounds, the honey sweetens the restaurant’s espresso and cocktails throughout the month, while Palo Verde Spa & Apothecary uses it in the cream massaged into guests’ hands and feet.

For National Honey Month, Andaz Scottsdale Resort & Bungalows integrates this local ingredient from hive to treatment room and table. Harvested on the resort grounds from hives maintained with urban beekeeping company Alvéole, the raw honey is used at both the spa and Weft & Warp Art Bar + Kitchen.

The bees’ homes sit among citrus trees and desert gardens near midcentury bungalows with private entrances and patios, while Camelback Mountain rises beyond the grounds as a beautiful backdrop.

Why the Desert Is Abuzz

The resort’s honeybees are only a small part of Arizona’s broader bee story. Arizona is home to more than 1,300 native bee species, and nearly 1,000 types can be found in the Sonoran Desert. Most live alone rather than in hives and do not make honey, though their relationship with the landscape can be just as specific. Cactus bees favor prickly pear, cholla and other cactus blossoms, while Centris bees help pollinate the yellow blooms of palo verde trees, a reminder that the desert has long been abuzz with their caretaking.

The Land of Milk and Honey

Pedicure Treatment at Palo Verde Spa & Apothecary, Andaz Scottsdale Resort & Bungalows

That relationship between bees and desert plants is on full display at the spa, where the Bee You Manicure and Pedicure begin with warm milk-and-honey aromatherapy. A prickly pear sugar scrub and cuticle oil lead to the most relaxing step: honey cream massaged into the hands and feet. The cream and experience make the adage “land of milk and honey” less biblical and more like an excellent afternoon in Scottsdale. During the treatment, guests receive treats of honey madeleines and almond granola, both made in-house.

Elsewhere in the spa, the Just Bee Massage uses a warm honey balm and a milk-and-honey scent, while the Bee Natural Facial includes honey lip butter. The Meant to Bee Scrub takes the ingredient full-body, pairing honey granules with orange whipped body butter.

Make a Beeline for Weft & Warp

Weft & Warp Art Bar + Kitchen, Bronwyn Knight.

At Weft & Warp, Executive Chef Sam DeMarco carries honey into breakfast with a glazed doughnut filled with citrus pastry cream and a honey oat shaken espresso. By evening, the menu shifts to cocktails and burnt honey gelato with freeze-dried honey and toffee bits, with honey-roasted peanuts served alongside drinks at the bar.

The savory side gets its turn during Hot Honey Happy Hour, where fried chicken dressed in chiltepin hot honey, house pickle and aioli is served with Frites Street cottage fries and live music. An Alvéole pop-up gives guests a closer look at the on-site hive program.

The one-night-only five-course Honey & Vine Wine Dinner follows a more expansive path, opening with beet and burrata finished with honey tuile before moving to bluefin with burnt honey-chili crunch and puffed rice. From there, rosemary-honey-cured duck confit and seven-day honey-cured Wagyu show how well the ingredient handles savory dishes before honey cake closes the evening, with wine selected for each course. The special night is set for September 30th.

Throughout September, the working hives reach their full potential, connecting the spa and restaurant through one local ingredient, from honey cream treatments to the dinner table. Following that journey through the resort makes this month of transitioning to the fall season that much sweeter.
