While cocktail foam isn’t exactly new, it’s having a moment. Once associated mostly with the classic Whiskey Sour, today you’ll find silky foam topping everything from espresso martinis to margaritas at luxury hotel bars and cocktail lounges. Sometimes it’s infused with citrus or lavender. Other times it’s flavored with coffee, herbs or seasonal fruit. Whatever the recipe, foam has become one of the easiest ways for bartenders to add another layer to a drink.
At Society Swan in Scottsdale, Director of Beverage, Aubrey Mansene, says guests are looking for cocktails that offer more than great flavor.
“Guests are getting excited by foams because they are craving cocktails that deliver more than just flavor,” Mansene says. “While the presentation certainly catches your attention, it’s all about creating a more layered sensory experience.”
Foam has come a long way from the traditional egg white. While bartenders still use egg whites in many classic cocktails, others are turning to ingredients like aquafaba and plant-based foaming agents to create the same light, velvety texture with more flexibility.
Beyond looking beautiful, foam changes the way a cocktail is enjoyed.
“Aroma plays a huge role in how we perceive flavor, and foam allows us to introduce those aromatics first,” Mansene explains. “It also adds texture, giving a cocktail another dimension and helping flavors unfold more gradually across the palate.”
That soft layer can also mellow brighter flavors, making citrus or spirit-forward cocktails feel smoother without taking away their character.
One of Swan’s favorite examples is the Southern Sophisticate, where the foam isn’t simply there to look pretty.
“The foam had to complement the floral flavors in the cocktail while adding texture to balance the brightness of the strawberry,” Mansene says. “The foam has to bring all of the components of the drink together. If it’s just added as a garnish, then it takes away from the drink as a whole.”
The fact that it photographs beautifully doesn’t hurt. In an era when every beautifully crafted drink has the chance to go viral on social media, foam has become another tool for bartenders to express their creativity. But behind the picture is technique, balance and plenty of trial and error.
Foam isn’t about putting on a show; it’s about making a better cocktail. The best foams don’t demand attention, they simply make every sip a little more memorable.
